My ‘non-pesto’sauce

Wonderful for rice, pasta or a simple cooked fish. The recipe is a result of trying to create a pesto with less fat. I always like the smell and look of pesto sauce, but when i take a spoonful on my pasta, i get enough so quickly, that’s not worth the effort of making pesto at all. Try this if you feel that way about pesto..

Ingredients

3 good handfuls of basil

1 handful of fresh coriander including the stems

2 tbsp of pine nuts

2 tbsp of your favorite olive oil

2 tbsp capers

juice of 1/2 lime

sea salt and

pepper to taste

Instructions

Step 1

Blend all ingredients and add lime juice to taste.

Perfect with oven baked potato pieces

Tips

For me a little pesto goes a very long way, so this is my ‘green variation’ less fatty, lighter and tasty version. You can add garlic, ginger and chili for heat- just don’t add so much you can no longer taste the herbs.
