Easiest watercress soup

This is a recipe derived from a number of old cook books and combined. It’s beautifully green and has a really nice taste. We sometime shave it for dinner with a bit of salmon, sesame seeds and the simple bread.

Ingredients

bunches of watercress
1 bunch of spring onions- or use 1/2 onion if that works for you
1 clove of garlic- if you can have
1 medium size cucumber, dized and cut and deseeded
2 cups or ca. 500 ml good chicken stock
200 ml lactose free cream
1 tsp fresh lemon juice
salt, pepper and cumin to taste
a touch of liquorice powder or star anise will be magic.
sesame oil tsp for the pot.

Instructions

Step 1

Place a 4 liter pot and heat the sesame oil. Then add the cumin seeds and when they sizzle add the onion and garlic and on medium heat fry until aromatic. Add the cucumber and fry for another minute.

Step 2

Add the chicken-stock and bring to boil. then add the watercress and place the lid on the pot for 3 minutes.
Take off the heat and bring to cool a little bit. then add everything to the blender and voila – soup

Step 3

Pour back in the pot and add cream, salt, pepper and bring back to boil. taste and adjust.

Step 4

When adding to the bowls- a drop of lemon juice will make the colors even more vibrant.
Serve with slice of toasted rye bread or grissini’s

Step 5

Add freshly chopped coriander for serving

Tips

You make this is the afternoon and heat through just before serving. if you use the star anise, make sure to take it out- and careful a little goes a long way.
This soup- like most- are even better the day after.
You can add a bit of spinach or go half/half between spinach and watercress as well for a variation. Check what you can eat ad adjust your portion size accordingly.
