Double chocolate cardamon pots

Life is just better with chocolate. This is my favorite dessert.

Ingredients

2 large eggs- whites only

1 tbsp caster sugar

generous pinch of ground cardamon

100 g dark chocolate 72 pct.

25 g white chocolate shaved

50 g white chocolate, chopped finely

Instructions

Step 1

Melt dark chocolate over a pot with water (use an oven proof dish and make sure the water does not touch the dish).

leave to cool a little bit.

Step 2

In a separate bowl, whisk the egg whites with sugar until very stiff and add the cardamon.

Step 3

Fold in the melted chocolate gently- add the chopped white chocolate until melted and incorporated.

Divide between 4-6 small ramekins or dessert glasses and leave to cool in fridge for minimum 2 hours . Longer is better.

Step 4

Serve with shaved white chocolate on top and berries along side.

This is not a chocolate mousse but like eating chocolate with a spoon. It is not a light dessert, but decadent and GOOD.

Tips

Use dark chili chocolate for this recipe- 72 pct works the best.

I sometimes use dark chocolate with sea salt instead or even add a few pistaccios at the bottom of my ramekins and on top as decorations.

You can melt the chocolate in the microwave for speed, but I do not like the smell and consistency, when I do this in my microwave. You should always treat the chocolate with respect.

You can leave out the cardamon, use cinnamon or vanilla instead if you prefer that taste.
