Green cabbage salad with beans

Salads in the winter are a challenge, so i am always after new ideas. This one was served by my sister and i have adjusted it for my allergies and served it endless times since Christmas. Full of good stuff.

Ingredients

1 can of white beans

one green cabbage, shredded and chopped finely- trim away the middle strings

1 pomegranate

Marinade:

1 tsp rice vinegar

2 tbsp sesame oil

Salt to taste

pepper to taste

Instructions

Step 1

Prepare the cabbage and mix with the marinade and beans. Leave to stand for a few hours.

Step 2

Add pomegranate seeds and mix well.Serve.

Tips

The salad can be used over several days. I mix the pomegranate only to the cabbage mix I will use and keep them separately for each serving. this makes it almost like a marinated cabbage after 1-2 days. You can add 1-2 tsp of dijon mustard to your marinade if you like. The taste is really good- I am just allergic to mustard.
