Almond salsa

This is super good with the chicken nuggets and add oven roasted new potatoes.


1 tomato, seeds removed and chopped finely
2 tbsp capers, chopped

3 clove of garlic, chopped finely

2 red onions, chopped finely

100 g roasted halved almonds

sea salt and pepper to taste

2 tbsp olive oil
1 tbsp rice vinegar

To Serve:
50 g feta cheese, chopped well


Step 1

Roast almonds on dry pan and leave to cool.
Mix all ingredients. leave 10 minutes and serve.


I prefer to serve this with both roasted oven potatoes and the chicken nuggets. But the dish as salsa could also be used for a roast or with Rice. be considerate of the sour taste of virngar and tomatoes with the Capers and sprinkle maybe with a tiny amount of sugar to temper acidity.
