This is another Ayurveda recipe, which is very handy and easy to make. It’s perfect for the tangines and even can be used in a spread, if you do not have the fresh lemons around.

Ingredients

5-6 organic lemons, cut into 1/2 cm thick slices

1/4 cup of sea salt

Instructions

Step 1

Place the sliced lemons in a bowl, add the salt, cover and leave overnight in the fridge.

Step 2

Add the sliced lemons in a mason jar and pour the liquid over, squeeze to submerge lemons. Top with lemon juice and extra salt if needed.

Step 3

keep cool, dark for a month. make sure to shake the jar every day and then when you start using, store them in the fridge.

Step 4

To use, remove the number of slices, you need lightly rinse in cool water. Use for the slow cooker, tangines or add to a dal in the last 5 minutes of cooking for a wonderful taste addition.

Tips

I always have a glass in my fridge. I find them very versatile, taste the rinds and use them as an additional spice when you cook greek chicken, pasta with shrimp and similar dishes.
