Baking time

23 minutes at 175 degrees air

Good for:

Buns made with skyr

Originally I got this recipe from my sister in Denmark. I have adjusted the recipe to reflect my needs, but also to add more fiber and more texture

3 tbsp chia seeeds
450 g skyr
1 tsp sea salt
100 g gluten free oats
60 g Brown rice flour
3 tbsp golden linseeds
3 tsp baking powder
4 medium eggs
2-3 spsk Psyllium husk
sesame seeds to sprinkle

Step 1

Mix skyr and eggs very well in bowl

Step 2

Add dry ingredients to bowl and mix well

Step 3

Leave for 15 minutes.
In the meanwhile heat the oven to 175 degrees and fan (or 200 degrees without)

Step 4

Once dough is ready you can add additional oats if it feels to wet. Then form 10 buns and place on baking sheet. Sprinkle with sesame seeds

Step 5

Bake for 23 minutes. Serve warm or cold, Freezes very well, so ideal for lunch portions or on-the-go needs.

These are so lovely and useful. If you do not have to go gluten free, use conventional oats and you can make them with additional oat bran and even make in muffin forms. this trick will make them higher, but i found mine despite additional oil were just sticking to the muffin-liners or forms, so easier without. You can add additional nuts or sesame seeds, but the point is they freeze very well, so on days i am at events, i can bring a bag of 2 and my carrots and voila i have bread for my soup or my meal.
Enjoy them and let me know your other ideas to change.
