Cauliflower- ayurveda style

I have found parts of this recipe in an Ayurveda cook book- and i tell you it’s my favorite way to eat Cauliflower- light dinner. Even one of my cats likes this cauliflower, once fried. Serve with 1/2 avocado and a salad + maybe some gluten-free flatbread and voila you have the makings of a tortilla wrap or just a wonderful dinner. Mostly vegetarian. Don’t forget the sauce though.

Ingredients

1 cauliflower cleaned and cut into florets

4 spoonful of ghee

1-2 tbsp rice flour

Mixed ground spice; 1/2 tsp cumin, cinnamon, koriander and sea salt

For the sauce:
2 tbsp mayonnaise
1 tbsp fish sauce
1 tbsp soy sauce
1 tbsp sriracha sauce
Juice of 1/2 lemon
Pepper to taste
To serve:
A Green salad with greens, radicchio, peas if you can have, cucumber, and spring onions.
gluten-free flat bread
Chopped Coriander
1/2 avocado for each person, sliced nicely and with a squeeze of lemon juice and pepper.

Instructions

Step 1

First make the sauce by mixing all the ingredients, whisk lightly cover and place in the fridge until ready to eat.

Prepare the plates or use a large serving dish with the flatbread, avocado and salad.

Step 2

Place the cauliflower florets in a plastic bag, add the rice flour and spices and share well until florets are covered. If the cauliflower gets a bit dry just sprinkle with a tiny bit of water, so the flour sticks.

Step 3

Heat the Ghee in the pan and add the cauliflower florets , fry over medium to high heat for 8-10 minutes, shaking once in a while, so they brown and fry evenly.

Step 4

Once ready add to the plates, drizzle with a bit of the sauce and sprinkle with Coriander (if using).

Tips

You can use rice flour, almond flour or coconut flour for this recipe. I like the rice flour because it does not add another flavor, but if you choose to serve this cauliflower with just the sauce for drinks- the coconut works great.
This can be served as well as a vegetable with lamb or chicken, but frankly I am a huge fan of cauliflower, so this substitutes the meat for us.
