A wonderful dip or cold sauce. I got the original recipe from my friend Anette, Mine looks completely different, but the idea about a green sauce with frittata or Spanish tortilla or … only the imagination is your limit- and you know what’s in it.
1 large bunch of fresh coriander
1/3 of green pepper, chopped
1 drop or 1/4 tsp of rice vinegar
2 cloves of garlic
olive oil- 50 ml- adjust
1 de-seeded green chili
1/4 tsp of cumin
Add sea salt and pepper to taste
Mix all ingredients in the blender. Pulse until you think the consistency is right. it can be sauce like or chopped like in the picture here. Season to taste and serve.
Sometimes i will add basil or rosemary to change the taste a bit.
