Pizza for dinner

This is simple and sometimes only Pizza will do. It’s not easy on an allergy friendly diet, but use my pizza base recipe and make this.

Ingredients

3-4 tbsp of a good arrabiata sauce

2 green onions sliced finely

1 large or 2 small tomatoes

A good handful of fresh basil leaves

5 slices of goat cheese

freshly crushed pepper

1/2 cup of thinly sliced courgette or use spinach leaves if that works better for you.

Mixed cheese (Gruyere, Parmesan cheese and grated Emmentaler) works very well) to top.

Step 1

Prepare first the pizza base as per the recipe

Step 2

Preheat your oven if not already done to 180

Step 3

Bake the pizza in the oven approximately 12 minutes until cheese is melted and the edges are brown.

Tips

Portion control is everything when making pizza on an allergy friendly diet, so share and eat with a nice salad.

You can use a base of a very thin layer of cream cheese- lactose free- instead of the Arabiata sauce. Think spreading with a knife and you will have a ‘white’ pizza.

You can also add a bit of cooked chicken with spinach and basil and leave the tomato out completely.

I live artichoke hearts and spinach with Mozzarella as an alternative. Just stick to 3 toppings.

Lately i have been travelling and had a gluten-free pizza with sliced tomatoes, jalapenos and mozzarella. Not bad at all.
