Aunt Eva’s salad dressing

An acquired taste, but in the summer!!

This works best in the season and as a very simple green salad.

When I was a child I spent time every summer with my aunt. This salad dressing, served with Danish newly boiled potatoes and filet of fresh fish was the best- and still for me is the best Danish dish imaginable. Try it.

Ingredients

juice of small 1/2 lemon or use lime

1 1/2 tsp sugar

1 1/2 tsp sea salt

1/2 dl cream- the full fat one

Instructions

Step 1

Mix, taste for sugar content and add a smidgen of sea salt and freshly ground pepper for contrast.

Mix with the green salad just before serving. This can not keep!

Tips

You should add only cucumber if anything, but leave tomatoes, peppers etc for another types of salad. This is the summer salad best mix of a real fresh iceberg, romaine, garden salad.
This portion is for a large salad- you do not need much dressing, so i normally do 1/2 portion for 2 people, when I use this to serve with fresh caught fillet of plaice and fresh summer potatoes with dill.
