Roasted pumpkin chips

The picture is borrowed and that recipe calls for feta and thyme which frankly also sounds delicious and might be coming next. However this is simply sliced pumpkin chips. Serve it with my mango salsa or apple salsa and you have a winner

Ingredients

A small pumpkin cut into very thin wcdges
a tsp of paprika

sea salt and a drizzle but really only a drizzle of olive oil.

 

Instructions

Step 1

Turn on the oven at 200 warm air or 210 degrees normal

Step 2

Slices the pumpkin in thin wedges. If you cut it in 1/4. then it it easier to remove the seeds, then the skin and then cut the wedges

Step 3

Place in a single layer on a baking tray. Do not overfill then they become mushy and boring. 

Step 4

JUST before you put the tray in the oven sprinkle with the olive oil, salt and paprika. Do not let it sit on the table prepared, the pumpkin slices will become mushy.

Step 5

They normally need around 35 minutes in the oven 200 degrees air/220 normal to get dark edges and be cooked. check once or twice on the first few tries and it will depend on your oven.

Tips

For the rest of the uncooked pumpkin. Cut it is thick chunks and boil in a water for 20 minutes. Pour out the water, mash the pumpkin and put in the fridge. Use next you bake my spiced bread or use it to make vegetables waffles.
