Whole roast chicken

As a young girl, I had a summer job in a diner at the beach in Denmark. One of the items most sold on a hot day was half a chicken cooked in oil. It has taken years for me to enjoy a roasted chicken again. This recipe is an old one and works very well.

Ingredients

1 good quality bio chicken

2 bio lemons, cut in eights lengthwise

3 bunches of rosemary

salt

pepper

2 teaspoon of butter

2 close of garlic

1 medium roasting bag

Instructions

Step 1

wash the chicken and clean inside

Add sea salt and pepper once dried with kitchen roll.

Step 2

Heat the oven to 200 degrees.

Step 3

Fill the chicken cavity with the lemons cut in eigths, rosemary

Step 4

lift the skin off the breast a little and smear the butter, garlic slices and salt.

fill in the oven roasting bag , if using and bake for 1 hour.

Step 5

Serve with a salad

Tips

I have started using the roasting bag because the chicken fat is always causing a mess in my oven. I find this get quite dry easily so 1 hour is enough at 200 degrees.

If can add other spices as per your liking- thyme or terragon- try that..
