During the last year of staying much more at home, food has been a challenge in most households. It’s either a matter of inspiration or interest.

In our household, I normally go shopping every few days for fresh produce and inspiration and suddenly my husband was home and doing the food shopping for both us and the neighbors.

I used the opportunity to practice meal planning.  I really do not like the 2nd-day same dish very much.  So instead, I have experimented with ‘leftover’ dishes- fried rice, frittata, and savory pies. 

There are constantly more mix and match dinners being added to Anyallergyfood. 

Monday: lemon-roasted chicken with tandoori vegetables. Tuesday; salad with some of the chicken. Wednesday Spaghetti with more zucchini, spring onions, orange zest, and shrimp. Thursday fried rice with leftover chicken and vegetables and then Friday, we will start all over again.
