Energy bars- no bake
I have used a couple of recipes for these energy bars and it’s definitely still a work in progress. But it’s ‘no-sulfites’, no fruit bars to bring along- add chocolate and what’s not to like?
Ingredients
4 tbsp chia seeds
2 cups of gluten free oats
1 tsp sea salt
3 tbsp maple syrup
1/2 cup peanut butter
1 tbsp sunflower butter

100 g almonds and/or mixed nuts
100 g gluten free dark chocolate, melted

Instructions
Step 1
Mix oats, almonds, chia seeds, sesame seeds and sea salt.
Step 2
Add peanut butter, sunflower butter and haselnut butter and maple syrup.
Mix all very well- you can use the mixer if you want, but it’s just as easy with a spoon, just a bit of work.

Step 3
line a 20/20 cm form with plastic wrap. Press your mix into the form and level out. it should be about 1 cm high- if you can not fill the form, just fold up the edges of the wrap.
Please note it must be pretty wet or the pieces will crumble quickly.
Step 4
Chill for 12- 24 hours. then cut into pieces 5×5 cm max. they are very rich, so you do not want them too large.
Step 5
Melt the chocolate and cover the bottom of as many pieces as you want. It serves 2 purposes- help hold the bars together and the taste.
Leave to cool and place in airtight container- will keep 5-6 days.
Tips
I mix sunflower, hazelnut and peanut butter to have variation- you can add coconut oil as well if you like, but i find keeping to the nut butters works very well. the biggest challenge here is actually making sure to add enough butter and maple syrup, so the bars do not dry out too fast.
For the chocolate cover You can use the Lindt chili chocolate dark bar- just one. It’s excellent and add that touch of chili to the energy bars. These without the chocolate are less ‘candy’ and great for substituting networking lunch, where you can not join in the sandwiches for example. With a cup of coffee- very nice as well in the afternoon. Just do not overeat- i can not even think to count the calories.
