Pasta with orange and shrimp
Free after an old recipe, changed to be allergy-friendly. I re-tried this recently and I have to say it is really good and an easy recipe for dinner.
Ingredients
Good quality gluten-free Spaghetti
20 good size raw shrimp
1/2 fennel sliced thinly
1 green chili, seeded and sliced
1 tbsp oil for cooking

1/2 onion, chopped
zest of 1/2 bio orange
zest of 1/2 bio lime
3 spring onions sliced
Julienne of 2 cm ginger
1 clove of garlic chopped
Juice of 1/2 orange
zest of 1/2 bio orange
zest of 1/2 bio lime
3 spring onions sliced
Julienne of 2 cm ginger

Juice of 1/2 orange
1 tsp Vodka
lime juice to taste
Salt and pepper to taste
For serving:
chopped flat leaved parsley
Instructions
Step 1
Juice the lemon and mix with salt, zest and pepper.
Clean the shrimp, prepare the slices of fennel

Cook the spaghetti as per the package instructions
Step 3
Heat oil in a pan. Add the onion, ginger and garlic and cook over medium heat for 2-5 minutes. Add fennel and chili and cook until fennel slices are softer. Add the orange juice and zest mix. Add vodka.Simmer for another 5-7 minutes, then add the shrimp and cook until cooked through
Step 4
Prepare serving dish with Spaghetti and add the shrimp mix. Mix well- arrange the parsley on top and serve hot.
Tips
When cooking, make sure the vodka and orange need to simmer for a few minutes extra. Both to ensure you reduce the juices but also so that there is not very acid and vodka taste. You can add a few asparagus, cooked chicken, more vodka- and even a bit of honey or soy to change the flavors slightly. I like the simple versions.
