Leftover fried rice

I often use leftovers for fried rice. This recipe is not exact by any means, but the addition of Brussels sprouts, celery with the cooked beef is excellent and an easy dinner

Ingredients

300 g cooked beef- in cubes

2 cm of ginger, sliced finely

2 cloves of garlic, sliced

1 red and 1 green chili, seeded and sliced

4-5 spring onions sliced

125 cooked rice- i prefer Basmati for this dish

bunch of raw broccoli

10-20 Brussels Sprouts halved

5 slices prochetti, cut in small pieces

2 stalks of celery cut finely

1/2 carrot cubed finely

1/4 tsp of sabal oelek

1 tbsp of glutenfree soy sauce

50 ml of premade miso soup

1 handful of spinach or ruccola

1 egg, mixed

a bit of lime juice

Instructions

Step 1

The largest amount of work with fried rice is always the cutting. The more evenly your vegetables are cut the easier it is to get it all finished to perfection at once. So spend a bit of time on this step.

Step 2

Once ready heat the sesame oil (1 tbsp) in your wok and add 1 tsp of cumin-seeds. When hot and sizzling add the onion, ginger and carrot to the pan. Turn to medium heat.

Then add the chile, Brussels Sprouts,celery, broccoli florets and the Miso soup. Cook for about 5-8 minutes until almost tender.

Step 3

Then add the meat, sambal oelek and soy-sauce and make sure it is piping hot.

Step 4

Add the spinach or ruccola and rice and onc ethe spinach is wilted, your rice should also be hot.

Step 5

Before adding the egg, turn up to high again for 2-3 minutes to make sure sure the rice and meat is hot.

turn down the heat to medium low and then you add the egg and mix through until egg is fully cooked.

Just before serving add a bit of the limejuice- you can decorate the plate with additional lime wedges, chopped coriander or flat-leaf parsley.

be careful to really heat through and though not cook the egg at too high temperature. You want kill any bacteria and make sure the dish is properly mixed

Tips

Any leftover vegetables will work on this. I sometimes use courgettes in small cubes- they will add moisture, so you can use much less soy and miso soup. Play with the combinations of chicken/beef /lamb or even shrimp as well. But keep it simple on the protein.
