It’s been a while, but I have been travelling and in preparation for that working on the ‘daily bread’ . Does it matter to bring flour mix and bread or could you simply eat whatever?

I worry about getting an attack when  travelling, and because of challenges with fruit, i can not so easily substitute, so I worked hard on trying to have enough bread and easy to bring mixes. Recipes for the simple bread, the potato fiber bread and wheat free Giabatta were all in use. Locally i could actually get gluten free ingredients in every supermarket. So that has become so much easier.

Lesson learned: Only bring bread for the first few days and then a few bags of ‘easy to bake’. The simple bread with oil and eggs was really moist the longest, so that is good to bring. The recipe for potato fiber based buns really evolved during the trip with a lot of help from my sister. This gave us freshly baked gluten free bread with a limited amount of ingredients. Try it!
