Ingredients
1 kg potatoes, peeled and cut in 2×2 cm pieces
1-2 sweet potatoes, peeled and cut into 2×2 cm pieces
4 carrots peeled and cut into slices
1 parsnip cut into 2×2 cm pieces or sliced

for the marinade:
2 tbsp sesame oil
1 tbsp sesame seeds
1 tsp cumin seeds
freshly ground pepper
1 tsp ground coriander
1 tbsp dried parsley or small bunch of fresh, if you have.

Instructions
Step 1
Toss everything into a plastic bag and make sure the vegetables are coated evenly.
Salt generously with kosher or sea salt just before setting the tray in the oven

Bake in the oven at 180 degrees (using hot air oven/ 200 if normal) for 45 minutes or until the the vegetables are brown and slightly soft.
Step 3
After 20 minutes, you can sprinkle a bit of maple syrup for a slightly sweeter taste. Also at this point, shake the dish so the vegetables cook evenly.
Step 4
cut 1-2 spring onions lengthwise in 5 cm pieces/like julienne and sprinkle over just before serving.
Tips
I love to add a bit of fennel. the key is to keep the vegetables all in similar sizes, but do not cut everything the same way. that is just boring.
You can also put your vegetables in separated folio trays and give different marinades. if you do that use the warm air oven setting to bake.
