Ingredients
1/2 small red cabbage, cut into thin strips
2-3 apples cut into small pieces
Juice of 1 orange
2 spring onions, sliced finely
1 cl chicken stock or use a yeast free cube

1/4 tsp cardamon
1 tsp raw cane sugar
1 tsp sea salt
Pepper to taste

Oil for cooking.
Instructions
Step 1
Fry onion in oil until soft. Add the red cabbage and cook until slightly softened.
Step 2
Add apple pieces, orange juice, spices, sugar, salt, stock.
Step 3
Cook on low for 15 minutes. Add pepper to taste and use a tiny bit of lemon juice on top to serve.
Tips
This can be reheated in the micro oven. Give it a bit of lemon juice to spruce up the color before serving.
This is perfect for duck, winter pork dishes or slow-cooked beef.
You can add a tiny sprig of thyme for a different taste, but then leave out the cinnamon.
