Borrowed from the FODMAP kitchen and changed to my taste.
This is brilliant for the stomach when you feel yesterday was not your best allergy-friendly day.
Ingredients
1/2 cucumber
juice of 1/2 or 1 lemon depending on your taste
200 g pineapple chunks frozen
2 handfuls of young spinach leaves or kale
splash of water – only if required
5 cm ginger grated
Instructions
Step 1
Add all ingredients to your blender. Enjoy.
Tips
If, like I do, you have challenges with sulphites you need to be very careful with bagged Spinach, unless you can get unwashed. It helps me to wash every bag of spinach leaves in cold water. However the storage time goes down significantly, so plan this.
Alternatively you can use Kale, which works beautifully. In fact, the more i use the kale version the better i like this version.
