Chicken legs easy Chinese flavor


1 kg of chicken legs skin on
2 cloves of garlic sliced
1 spring onion
Coriander leaves or spring onions to serve
For the sauce:
1/2 cup of soy sauce
2 tsp sea salt
3 tbsp oyster sauce

Ingredients
For the sauce:
1/2 cup of soy sauce
2 tsp sea salt
3 tbsp oyster sauce
3 spring onions sliced lengthwise julienne
5 cloves of garlic smashed or sliced
5 cm piece of ginger sliced finely
3 shalotts cut in 4’s
Instructions
Step 1
wash the chicken legs to remove any blood
Step 2
Heat water in a large pot and add the garlic and spring onion.cook the chicken legs for 5 minutes on high. Turn the heat to simmer and cook another 15 minutes.
Place the chicken legs in ice cold water and leave for 10 minutes. Remove the meat from the legs and keep warm. or just before step 4, heat in the micro for 1 minute.
Step 3
In the meantime heat the sesame oil in a pan and cook until brown: shallots, spring onions, garlic and ginger. Once fragant and brown, preserve 1/3 cup of the sesame oil for the sauce and discard the rest of the oil.
Step 4
Mix in a bowl the soy sauce, salt and oyster sauce. Add 1/3 cup of the oil from the onion mix.
Mix well and pour over the cooked chicken.
Step 5
Serve with the drained onion mix on top, add coriander leave and serve chicken with freshly cooked rice.

Tips
This was called lazy Chinese chicken dish- i do not think it’s lazy at all, but the meat is so tender and good. The dish can be served cool or reheated. I served with a salad and Basmati rice cooked with extra onion, ginger and the stems from the coriander leaves,chopped finely. Super dinner.
