Cauliflower hummus
This is alternative to the traditional hummus and delicious with vegetable sticks like carrots or cucumber – try it for lunch. I have borrowed the recipe from whole30 and adjusted a bit to my taste.


1 large head of cauliflower, divided in florets
3 tbsp of olive oil divided
4 tbsp of tahini
Juice of 1 lemon
2 tbsp of cold water
2 garlic cloves
Ingredients
1 tsp of sea salt
1/2 tsp of cumin
1/2 tsp of coriander

Instructions
Step 1
Prepare the cauliflower and toss with 1 tbsp of the olive oil.
Bake at 180 degrees for 20 minutes.
Step 2
Transfer to blender or food processor. Add tahini, spices, lemon juice, water and olive oil. Blend until smooth and taste with additional salt and pepper.

Tips
I have tried this- the portion is huge so really consider sharing with friends. the taste is quite intense, so you ahve to really like the cauliflower- or add additional tahini. Serve with chopped parsley as i did and have for a lunch.
