Oven baked potato slices

This is my version of french fries and guaranteed clean potatoes during the winter months. Goes perfectly with the gluten free fried fish

Ingredients

1 kg of potatoes for 3-4 people

2-3 tbsp of sea salt- you can add more later, but this is not supposed to be salt free.

a touch of good olive oil for the baking

Instructions

Step 1

Preheat the oven to 200 degrees celcius

Step 2

Peel the potatoes and slice thinly. Dry the slices by placing on kitchen paper and then pad them with another sheet of kitchen paper. Place in a oven roasting tray- I use teflon, but otherwise line a tray with baking paper. they do not have to be in one layer but not too thick a layer eitherPeel the potatoes and slice thinly. Step 3

Drizzle with a bit of your favorite olive oil- not too much. Add the sea salt only just before they go in the oven. This is very important.

Step 4

You can crack pepper over as well if you want.

Bake in the middle of the oven 35-45 minutes until browned and slightly crisp.

Shake 2-3 times during the cooking.

Tips

This is our chips version- you can always add a bit of oregano or rosemary, but I prefer my spice to come from the ‘non’- pesto sauce for this.

Do not forget the drying- and only add the salt right when they go into the oven- that’s the secret to getting them crisp and not wet.
