Oven-baked salmon- marinated Thai flavours.
Thai inspired and works very well as a dinner or lunch dish for guests. Serve with a nice salad for lunch or with rice and vegetables for dinner.
Ingredients
180-200 g salmon per person, cut into 2 pieces each
thin slices for lemon at least one per fish slice
sea salt and freshly ground pepper
Marinade:
Minched galangal or ginger ca 2 cm
1 tbsp brown sugar or maple syrup
1 tbsp fish sauce
2 tbsp soy sauce
juice of 1 lime or 1/2 lemon
To serve:
slices of 1 green chili and one spring onion
Alternatively sprinkle with coriander leaves
Instructions
Step 1
place the fish in the marinade, cover and keep in fridge 20 minutes to 1 hour.
Step 2
Heat the oven to 200 degrees. Remove salmon from marinade and place on baking paper in a oven proof dish.
add salt and pepper and add slices of lemon on top.
Step 3
bake in the middle of the oven 12 to 15 minutes- depending on your taste and oven. I like slightly under-cooked. If you do not stick to the 15 minutes baking time.
Step 4
Taste and adjust the seasoning. Pour a tbsp over each plate with the scallops and bring the rest of the sauce for your guests to add.
Step 5
This recipe works very well with coconut rice and a green chili sauce. But alternatively use with a green salad.
Tips
Perfect dinner for guests. looks pretty, easy to make and taste great for both children and grownups. I will sometimes use same marinade for chicken breasts cut in 3 pieces and bake that in the oven for 20-30 minutes. that works great for lunch.
