Frittata with sweet potato and feta
Brilliant dinner with a salad.
Ingredients
1/2 sweet potato, chopped into small pieces
5 green onions, sliced finely
1 green chili, seeded and finely sliced
1-2 clove of garlic
1/2 fennel cut into small pieces
1 tbsp sesame seeds
tiny bit wasabi paste for taste

8 large eggs or 10 medium eggs
salt, pepper
1/4 tsp ground cumin
feta cheese 100 g crumbled- or 50 g of grated Parmesan cheese

Instructions
Step 1
Heat a pan. Use one, which can go from stove top to oven directly. At medium heat fry onions, chili, garlic,fennel and sweet potato until tender.
Step 2
In a bowl mix the eggs, salt, pepper, crumbled feta cheese and cumin. as well as the parmesan cheese if using
Step 3
Heat oven to 200 degrees (or 180 vent)
Step 4
Once the onion and potato mix if finished, pour over the egg mix. Mix well and cook over low heat until the top is not quite firm. Approximately 5-7 minutes
Step 5
Move pan to oven and leave to finish the cooking. Normally another 5-7 minutes will do. But keep an eye. When nicely browned and ‘high’, take out of the oven and serve immediately with a green salad.
Tips
You can mix almost anything for a good frittata, but keep it simple. Frittata like fried rice is leftover food, so a bit of cooked chicken, green asparagus, leek, and goat cheese works very well. Just do not use too much filling.
Some of my favorites are leftover soya marinated chicken with green onions and sweet potato. Or leek with goat cheese if you can have that. I even have used aubergine mixed with chicken a few times for a nice smokey flavor. Try and let me know your favorite combinations.
