My favorite winter salad

Salads in the winter are difficult unless you use watery green salad or salad in bags, which has mostly been washed in sulfites, so a good recipe for a nice salad, which works as a side dish in the winter. This is just great and a lot closer to a coleslaw, I think. I have borrowed it- as usual- and adjusted the recipe to fit my allergies.

Ingredients

handful of walnuts, broken into smaller pieces.

2 carrots grated

1 cup of radicio salad- finely cut

2 cups romaine salad- or similar

if using, green part of one spring onion

Marinade:

1 tsp rice vinegar

1 tbsp sesame oil

2 tsp soy sauce- buy low salt and gluten-free

1 tsp maple syrup

pepper to taste

1 tbsp sesame seeds for decoration

Instructions

Step 1

Mix the marinade- and taste it. leave to stand. in a mixing bowl add all the vegetables and the nuts. Mix well with marinade. Sprinkle with sesame seeds and serve.

Tips

For protein you can add a bit of cooked chicken or a rest of TOFU.

This is my go-to salad for color and crunch.

It is even good next day for lunch.
