TOFU bok choi- spicy
i like tofu, but very few variations works for me, so i buy this in the Chinese supermarket and it works as a nice and spicy and simple dinner with jasmine rice.
Ingredients
250g Chinese smoked tofu or precooked tofu
3 cm of ginger, sliced finely
2 cloves of garlic, sliced
2 red and 1 green chili, seeded and sliced
4-5 spring onions sliced
4-5 mini bok choi cut length ways
1/2 cup cashews soaked in cold water
1 small red onion, sliced finely
chopped coriander or parsley to serve
1/4 tsp of sabal oelek
1 tbsp of glutenfree soy sauce
a bit of lime juice
200 g jasmine rice cooked as per package instructions
Instructions
Step 1
cook the rice as per the package instructions
Step 2
in the meantime prepare your vegetables. Heat sesame oil in your pan and add cumin seeds. When sizzling add onions, garlic, ginger and fry 3-4 minutes until softened.
Then add the chili, tofu cubes and bok choi
Step 3
Then add the meat, sambal oelek and soy-sauce and make sure it is piping hot.
Step 4
make sure to heat really well through and add the cashews and then add the sambal olek, soy sauce and lemon.
Step 5
Once the dish is really hot- 7-8 minutes and the rice finished.add a bit of the lime juice- you can decorate the plate with additional lime wedges, chopped coriander or flat-leaf parsley.
Serve with the rice or as a colorful vegetable dish with fish.
Tips
I think this without the tofu works very well as a vegetable with a dal, rice or even with fried rice. the bok choi is slightly sweet, so the heat from chili works very well. you could also try with prawns instead of the TOFU, but I like meatless dinners. If you have a problem with the cashews- almonds soaked works beautifully as well.
