Friendly Spaghetti Carbonara
What is not to like? My husband really likes spaghetti carbonara, bacon and all, but I prefer not to cook two dinners, so this is my friendly version. let’s not count the calories, but once in a while.
Ingredients
good quality gluten-free Spaghetti
100 g prosciutto, roasted

200 ml lactose-free cream
1 egg
50 g mixed grated cheese- lactose-free
Sea salt and loads of cracked pepper
1 teaspoonful of the spice mixture from Miracoli original
20 g of parmesan cheese

For serving:
chopped flat leaved parsley
extra pepper
1 large tbsp of butter
Instructions
Step 1
Mix the sauce and set aside as follows:
Add the egg, grated cheese, parmesan, salt, pepper and cream and spice in a bowl and mix well.

Step 2
Cook the spaghetti as per the package instructions
Step 3
roast the prosciutto in a pan using olive oil.
Step 4
Pour water from spaghetti, when ready. Add the butter to the pan and pour the spaghetti back. Stir and at medium heat.
Add the prosciutto including the leftover oil. Add the cheese sauce and mix very well. Make sure the dish is heated through while mixing.
Serve hot.
Tips
There is a school that says no cream in the original spaghetti Carbonara and just as many people saying yes.. There is surely no Miracoli spice mix in most versions, but it is really a nice touch. If you can use some bacon cooked. It adds additional fat and you can reduce the amount of butter. It’s just not for me due to the E number in the process of bacon production, so the prosciutto is a close second.
