
As a young girl, I had a summer job in a diner at the beach in Denmark. One of the items most sold on a hot day was half a chicken cooked in oil. It has taken years for me to enjoy a roasted chicken again. This recipe is an old one and works very well.
wash the chicken and clean inside Add sea salt and pepper once dried with kitchen roll.
Heat the oven to 200 degrees.
Fill the chicken cavity with the lemons cut in eigths, rosemary
lift the skin off the breast a little and smear the butter, garlic slices and salt. fill in the oven roasting bag , if using and bake for 1 hour.
Serve with a salad
I have started using the roasting bag because the chicken fat is always causing a mess in my oven. I find this get quite dry easily so 1 hour is enough at 200 degrees. If can add other spices as per your liking- thyme or terragon- try that..
