
the secret to this dessert is to use less mascapone cream and thereby making the dessert less 'fat'.Even people who does nto normally like Tiramisu likes this one.No baking involved, but a really nice dessrt. I dusted mine with a sprinkle of dried rasperries.
Find the dish you want to use for serving and check how your lady fingers fit. I use a small glass pyrex (15cmx20cm), which I can use a serving dish directly and fits with exactly 2 layers. You can do smaller, round, individual servings etc..Just check it first.
Prepare the coffe and mix with Rhum . Leave in a shallow dish.
Mix your egg yolks, sugar and vanillapaste. Mix well and then add all the mascapone and enough of the milk to make a cream. You will see when it's enough
Dip the ladyfingers in the coffee mix on both side and place directly in you dish. Do not soak them.
Layer with half the mascapone cream. Do not use too much here.
Make an extra layer of lady fingers dipped in the rhum and coffee mix. Then finish with the rest of the mascapone cream
Dust with cocoa power and leave to cool at least 2 hours in fridge before serving.
It works eating the rest the day after. Beyond that it gets soggy. You can more cream for a ticker layer in the tiramisu, but I like a taste of not too much.You can bake your own gluten-free lady fingers. I do not have a recipe (yet), but you can find them online. And finally you can avoid the alcohol and just use more coffee.
