
This is a very easy way to prepare your carrots as a side dish. You can change the cuts, add additional spices or even mix with parsnips or other root vegetables.
Prepare the carrots in pieces- as long as they are all approximate the same size, so they cook evenly, you can use sliced, julienne, lengthwise or a combination.
Heat your oven to 200 degrees and use a roasting pan coated with a bit of oil
I add my carrots pieces to a plastic bag in advance, then add the oil, paprika, salt and maple syrup and shalke well until well coated.
Bake for approximately 25 minutes or to your taste. I like crunchy, maybe you like softer then give 35 min.
Shake half way through the roasting and maybe add a bit of extra maple syrup for a sweeyer taste
Move to a serving dish and add the chopped haselnuts and maybe some chopped parsley on top.
In the original recipe the carrots are soaked in melted butter before serving. I think, it's too much fat but you can melt about 2 tsp of butter and pour over just before serving.
