
When I grew up, cauliflower was mostly boiled in salty water. I am forever trying to find other ways to prepare the cauliflower and as part of a vegetarian meal, this version has become a favorite. Hope you will like it as well.
Prepare the cauliflower. Cut into smaller florets.
Heat your oven to 200 degrees
Mix the spices with cauliflower florets and oil. I use a plastic bag for this step, but you can use a bowl as well. Shake well and place in a single layer in your roasting pan.
Bake for 35 min or until nicely done. Shake a few times, during the roasting. About half way through, I add the cold butter and shake well. This will help the cauliflower shine more. Serve with chopped parsley or any other herb, you like.
You can mix any spices for this. I have tried a mild harissa with salt. But that is instead of the cumin, koriander, tumeric and dill. Do not 'over spice' or you can not taste the cauliflower at all. The butter is definitely optional, but i think it gives a nice touch and a different taste. Just remember if you are using salted butter, you can use less salt for the roasting.
