
Not pickled, but a allergy-friendly version. This dish is a christmas variation from Denmark, though it is traditionally served warm and slightly pickled as part of the Christmas sides.
Fry onion in oil until soft. Add the red cabbage and cook until slightly softened.
Add apple pieces, orange juice, spices, sugar, salt, stock.
Cook on low for 15 minutes. Add pepper to taste and use a tiny bit of lemon juice on top to serve.
This can be reheated in the micro oven. Give it a bit of lemon juice to spruce up the color before serving. This is perfect for duck, winter pork dishes or slow-cooked beef. You can add a tiny sprig of thyme for a different taste, but then leave out the cinnamon.
