My favorite winter salad

Salads in the winter are difficult unless you use watery green salad or salad in bags, which has mostly been washed in sulfites, so a good recipe for a nice salad, which works as a side dish in the winter. This is just great and a lot closer to a coleslaw, I think. I have borrowed it- as usual- and adjusted the recipe to fit my allergies.

Good to know

For protein you can add a bit of cooked chicken or a rest of TOFU. This is my go-to salad for color and crunch. It is even good next day for lunch. 1/2 mango really adds sweetness, or try 1/2 apple cut into small cubes. If you are low FODMAP, leave out the fruit and use my version with carrot.
