Double chocolate cardamon pots

Life is just better with chocolate. This is my favourite dessert.

Method

    Step 1

    Melt the dark chocolate over a pot of water (use an ovenproof dish and make sure the water does not touch the dish). Leave to cool a little.

    In a separate bowl, whisk the egg whites with the sugar until very stiff, then add the cardamom.

    Step 3

    Fold in the melted chocolate gently, then add the chopped white chocolate until melted and incorporated. Divide between 4-6 small ramekins or dessert glasses and leave to cool in the fridge for a minimum of 2 hours. Longer is better.

    Step 4

    Serve with shaved white chocolate on top and berries alongside. This is not a chocolate mousse, but more like eating chocolate with a spoon. It is not a light dessert, but decadent and GOOD.

Good to know

Use dark chocolate for this recipe — 72% works the best. I sometimes use dark chocolate with sea salt instead, or even add a few pistachios at the bottom of my ramekins and on top as decoration. You can melt the chocolate in the microwave for speed, but I do not like the smell and consistency when I do this in my microwave. You should always treat chocolate with respect. You can leave out the cardamom and use cinnamon or vanilla instead if you prefer that taste. The sky is the limit here.
