
This is an original recipe from Nothing Fancy. A really nice cookbook, but the book not considering specific allergies and that's fine for inspiration. I have made this with whole chicken, thighs with skin and bone or with chicken breasts. Lately, I keep reverting to my favorite version, which is chicken thighs without skin or bones. It's easy and really juicy.
Heat your oven 200 degrees
Prepare the chicken pieces, salt and pepper well.
In your oven prrof carrole (dutch oven for example), brown the chicken pieces 3-5 minutes
Add the lemon and onion, move the chciken around, so you can caramelise the lemon slices a bit at the bottom.
Add chiliflakes, oregano, dates and your stock the pot. Make sure it boils, then add the lid and transfer to the oven for 15 minutes.
Remove the lad for another 5-10 minutes to reduce the sauce a bit
Add additional oregano, move to a serving dish and add the figs
I often make this recipe with a mix of chicken thighs and breast for guests and serve with my oven roasted potatoes or root vegetables for lunch. I then prepare everything including step 4 beforehand (but only 10 minutes in the oven and then just heat another 15 minutes until really hot in the oven just before serving.
