
True comfort food for a Friday evening- 1 hour in the oven and you are done. It's even better for lunch the day after. Last week I tried this vegetarian- just with cauliflower instead of chicken. It need some more spice, but absolutely worth adding to your menu.
Turn on the oven at 200 degrees- over/under
Using a larger oven proof dish add the rice, onion, garlic, chicken, pepper, peas to the dish.
Add the greek youghurt, coconut milk, all the spices and half the chicken broth
Mix with your hands- use gloves the turmeric and paprika will color your hands.
Cook for 1 hour at 200 degrees. after 30 minutes check if you can liquid enough otherwise add the extra chicken broth. All liquid must be absorbed and the dish dry, but obviously not burned at the bottom so check the first time you make it. Serve with the fresh coriander and a touch of lemon juice.
Serve alternatively, as a vegetarian dish with cauliflower instead of the chicken. Then add more spices such as chili or koriander. You could add additional herbs such as thyme or parsley if you want to experiment. I am not a big fan of reheating herbs like parsley or dill, so I prefer dried spices and herbs for this dish- until serving. I often use a green bell pepper instead of red bell pepper and add a green chili because my husband is having problems with red peppers. A teflon oven dish is easily used to avoid burning- If you do not like those- or want to serve directly at the table
