
This is alternative to the traditional hummus and delicious with vegetable sticks like carrots or cucumber – try it for lunch. I have borrowed the recipe from whole30 and adjusted a bit to my taste.
Prepare the cauliflower and toss with 1 tbsp of the olive oil. Bake at 180 degrees for 20 minutes.
Transfer to blender or food processor. Add tahini, spices, lemon juice, water and olive oil. Blend until smooth and taste with additional salt and pepper.
The portion is huge so share at a party. The taste is quite intense, so you have to really like the cauliflower- I add extra Tahini and chopped parsley.
