
Originally I got this recipe from my sister in Denmark. I have adjusted the recipe to reflect my needs, but also to add more fibre and more texture.
Mix the skyr and eggs very well in a bowl.
Add the dry ingredients to the bowl and mix well.
Leave for 15 minutes. In the meanwhile, heat the oven to 175 degrees fan (or 200 degrees without).
Once the dough is ready, you can add additional oats if it feels too wet. Then form 10 buns and place on a baking sheet. Sprinkle with sesame seeds.
Bake for 23 minutes. Serve warm or cold. They freeze very well, so ideal for lunch portions or on-the-go needs.
These are so lovely and useful. If you do not have to go gluten free, use conventional oats and you can make them with additional oat bran. You can add additional nuts or sesame seeds, but the point is they freeze very well, so on days I am at events, I can bring a bag of 2 and my carrots and voila, I have bread for my soup or my meal.
