
My husband loves this simple, old-fashioned Danish dessert. It is best eaten with just a bit of cream — and maybe even extra sugar if you like. I cannot have any, as apples are very high FODMAP. Once in a while I will make it, so I wanted to share the recipe here — simple, and obviously cooked apples are not on everyone's no-list.
Prepare the apples and cook for 20 minutes over medium heat with the vanilla bean and water. Add the sugar and cook for another 10 minutes.
Leave to cool, remove the whole vanilla pod and serve with chilled cream and sugar, or with macaroons.
You can create another dessert by layering macaroons with 1 dl of sherry, then adding the apples and topping with whipped cream. That is called apple cake in Danish and was a childhood favourite of my husband's — still is, actually. For the cream I will use full-fat lactose-free cream. Do not pour tons over — a little goes a long way — or use full-fat milk instead.
