
These have been the constant winter cookies for Christmas, gifts for family, and well any guests into the New Year. They are simple, naturally gluten free and keeps 4-5 days in a sealed glass. Perfect with a cup of tea or coffee.
pre-heat the oven to 180 degree over/under heating
Mix the coconut oil, sugar, egg, vanilla extract and almond extract until well combined
Add in the almond flour and salt
with cold hands form little balls- you should get 16-18 from this portion. press each with a cold fork
Bake for 20 minutes, leave to cool and then dip in melted chocolate/ or drizzle if you prefer.
If your hands gets coated with the dough, it helps to wet your hands with COLD water. That will help you make the balls easier. For the melted chocolate i use a bain Marie, but microwave works very well as well. Often i use a normal 72% square of chocolate or a chili chocolate to coat. completely up to you., but feel free to experiment.
